Jean Cockburn retired from her professional career as an academic librarian in 2008 to become a textile artist living on Denman Island, British Columbia. She draws, quilts, embroiders, knits and crochets, makes wearable art, weaves baskets, dyes fabric, and paints watercolours. Her work has been exhibited locally in juried and group shows on Denman Island, in Courtenay, Comox, and Duncan on Vancouver Island, in West Vancouver, and across Canada with the Surface Design Association.

Fall Pasta Dish

Fresh zucchini and tomatoes and garlic make another great dinner. I glugged some olive oil into a pan, and sautéed a chopped onion, then added a chopped zucchini and 3 minced garlic cloves. Added 2 tomatoes chopped, then a pinch of dried red chili pepper and salt and pepper. While that was cooking, I boiled some rigatoni pasta. When that was done, I put the cooked pasta into the veggies and added pasta cooking water until it looked nice and saucy. Then I stirred in crumbled feta cheese. It was lovely to eat.
