Jean Cockburn retired from her professional career as an academic librarian in 2008 to become a textile artist living on Denman Island, British Columbia. She draws, quilts, embroiders, knits and crochets, makes wearable art, weaves baskets, dyes fabric, and paints watercolours. Her work has been exhibited locally in juried and group shows on Denman Island, in Courtenay, Comox, and Duncan on Vancouver Island, in West Vancouver, and across Canada with the Surface Design Association.

Shrimp Curry for supper

This may look like a bowl of yellow gloop, but it is delicious Shrimp Curry yellow gloop.
How did I make this you ask? Well, as you may recall, Saturday night's dinner included buttermilk mashed potatoes, steamed winter squash and cauliflower baked in cheese sauce. There were leftovers of everything for dinner on Sunday, and today, that is Monday, some of the vegetables remained - leftover leftovers, if you will.
Sooooo, I put these veggies in a pot, added the rest of the buttermilk, added some whole milk, tossed in a couple of teaspoons of curry powder, shook in some garam marsala and heated it up and mashed it all together until smoothly lumpy. Then I tossed in the last of a large bag of frosty shrimps that I had bought at Costco some months ago and heated it all up until slightly bubbly, adding some salt and more curry powder judiciously. Then I put it in soup plates, added a big dollop of yogurt and it was amazingly good! Now this bowl is leftover, that is leftover from the leftover leftovers - I think that I will have if for lunch tomorrow and end this saga.
