Jean Cockburn retired from her professional career as an academic librarian in 2008 to become a textile artist living on Denman Island, British Columbia. She draws, quilts, embroiders, knits and crochets, makes wearable art, weaves baskets, dyes fabric, and paints watercolours. Her work has been exhibited locally in juried and group shows on Denman Island, in Courtenay, Comox, and Duncan on Vancouver Island, in West Vancouver, and across Canada with the Surface Design Association.

Excellent Easter Bread

I made this bread yesterday, for dinner this evening, from "Artisan Bread in 5 Minutes a Day". It could not have been easier. I put all the ingredients, in order as listed below in order to hydrate the yeast, into the glass bowl of my Kitchen Aid mixer. I mixed with the dough hook for about 3 minutes, then covered the bowl and put it in the fridge overnight. I took it out of the fridge and put it on the counter in our cool kitchen at about noon, and formed the braid at 5 PM. At 5:30 I baked it at 350 degrees for 30 minutes. Incroyable! We had it with wine before our lamb dinner. The eggs are from my neighbour's chickens, and were only about 12 hours out of the hen. They give the bread a beautiful golden crumb.
Challah Recipe, halved from the original in the book:
1 cup lukewarm water, 3 teaspoons instant yeast, 3 teaspoons salt, 2 eggs, 1/4 cup honey, 1/4 cup melted butter,   4 cups unbleached four. Mix all together with a dough hook, refrigerate at least 12 hours, bring to room temperature for 4 hours, then braid, rest and bake. Let it rest and cool before you tear it into chunks and eat with lots of butter. Yum!
